Lifestyle | Thai Basil Chicken

This delicious meal only takes half an hour of prep + cooking time. The kitchen smelled so good as I was cooking this up for lunch. The scent reminded me of my favorite Thai restaurant and that’s how I knew I was cooking it correctly!

Here are the ingredients…

2 tablespoons peanut oil
1/4 cup minced garlic
1 pound ground chicken breast
(12) Thai chiles, sliced into thin rings, to taste
2 teaspoons soy sauce
2 tablespoons fish sauce (patis)
1 cup fresh basil leaves

Here’s how I did it…

1. Heat a large saucepan on high heat. Pour in peanut oil and immediately add garlic, until it turns golden brown. 20 seconds.
2. Mix in the ground chicken and continue cooking and stirring until the meat is no longer pink. 2 minutes.
3. Stir in the chiles, soy sauce, and fish sauce until the chiles soften.
4. Add basil, until the basil has wilted.IMG_4541

Serve with rice. By the way, as for the chiles, I put the 12 in parentheses because not everyone likes super spicy dishes. I ended up using 3 and you could still taste the hint and kick of spice.

Word of warning: Funny story, I rubbed my eye after cutting up the chiles. So basically, I burnt my eye with my chile fingers. It hurt like a mother.

  1. OUCH re: chilli fingers in eyes! Did you have to flush it to get rid of the residue? 😦
    My favourite Thai dish is green curry chicken (but mild though, I can’t take the spice) – yummy!
