What you’ll need…
1 box red velvet cake mix
2 large eggs
6 tablespoons melted butter
1 teaspoon lemon zest
1/2 cup confectioner’s sugar
1/2 teaspoon cornstarch
How to do it…
-Preheat oven to 370 degrees Fahrenheit (yes, I mean 370.) Grease baking sheets.
-Combine and mix cake mix, eggs, butter and lemon zest in a large bowl until blended.
-Mix sugar and cornstarch, and set it aside.
-Roll the dough into 1 inch balls (in this case, they are way bigger, like 3 inchers!) into the sugar mixture. Place them two inches apart onto the pans.
-Bake 9 minutes, let cool, and enjoy!
The cookie itself isn’t that sweet but it is definitely balanced by the sugar on the outside of the cookie. The cookies are meant to puff up and crackle, hence the “crinkle” cookie. If you love red velvet cake, brownies, and cookies, then combine those, then you’ll love these!
