What you’ll need…
1 large zucchini
Parmesan… that’s it!
How to do it…
-Preheat oven to 425 degrees Fahrenheit. Line pan with parchment paper.
-Cut zucchini into thin circle slices. Line them up so there are none overlapping.
-Take spoonfuls of Parmesan and sprinkle each slice with a generous amount.
-Bake in the oven for 15-20 minutes or until golden brown (I left them in for 15 minutes.) Take them out and serve immediately!

1 cup zucchini (grated), 1 egg, some onion (or not if you don’t like it), grated cheese (as little or as much as you like, I like a lot), 1/4 cup breadcrumbs, and whatever spices you like (I’ve tried oregano, basil, garlic, salt and pepper). Squeeze excess water from zucchini or else the tots will be soggy. Combine all ingredients, spoon into greased muffin pan (mini muffin size is best), bake at 400F for 15 to 18 minutes or until top is browned – if you use a bigger size muffin tin, you will need to increase the baking time. It is kind of like a tater tot, but better! Enjoy! 🙂

OMG I feel so bad about your Parm situation and I just keep throwing out parm recipes out there — Cheese is life! LOL If you make them thin enough without burning it, they do become crispy!

You grow zucchini?! That’s awesome! I grow chives, mint, and basil.. Those are my successful plants at the moment.

Yes, I do! And nic, I grow okra, tomatoes, sunflowers, marigolds, beets, basil, mint, carrots, cilantro, parsley, yellow squash, cucumbers, zucchini, and dill. We have an extra lot as our backyard so lots of growing room!

I know what you mean. I hardly have any plants and even then, I’m like what are we gonna do with all these chives?!?!?! It’s like you always have to come up with a new recipe so you don’t get bored with the fresh stuff you have.

Yup. If you have any neighbours, sometimes they can take your extra herbs. Do you grow your mint inside or out?

I really want my mint to last through the winter since I love putting it in tea, salads, etc. Do you think it would work inside if I transplanted it and put it in sunlight?

I feel like it does best when it is planted outside. I think you can try it for when it’s almost wintertime. It just grows so much when it’s outside as if it’s a weed!

It’s strange, but I actually liked the thicker ones better! When they were thin, I thought hmm I don’t taste any zucchini at all lol

Nice and easy recipe! I love zucchini, even though when I was a kid, my mom grew it and one summer we had zucchini coming out our ears. She made zucchini everything – even breads and cakes. We got pretty sick of it. :p
