I’m not one to be big on salads, but since this Caprese salad consists of tomatoes, mozzarella and basil, count me in! This is light, refreshing and keeps you full, for the salad course, anyway. Let’s get started!
What you’ll need:
tomatoes
mozzarella
basil
3 tablespoons olive oil
salt
pepper
How to make it:
- If the tomatoes are too big, cut them in half the way I did. Add to bowl.
- Do the same for the mozzarella balls. Add to bowl.
- Sprinkle some basil leaves so you see all three colors (red, white and green) evenly.
- Add olive oil and salt & pepper to taste. Mix.
At this point you can just eat the salad. But for cute little twist, whip out some tooth picks and start skewering those bad boys together.
You should be left with a pretty presentation, pleasing to the eye and tasty when eaten. Having it on toothpicks makes for easier clean up and makes a great little snack for guests at a party.

I recently started to make it. I thought since I have fresh basil, WHY NOT?! It’s so yummy and refreshing and it actually can fill you up unlike some other salads.
